We've all experienced that awkward moment: finding, three days later, the piece of meat bought "for tonight" at the back of the fridge, in a state that really doesn't make you want it anymore. Rest assured, it's almost never a fatality, just a matter of good reflexes. At Carn Lab, we prefer to give you these now rather than see you come back looking dejected.
Rule number 1: the right place in the fridge
All fridges have a colder zone, usually at the bottom, just above the vegetable drawer. It's there, and only there, that the meat should live. Storing it on the door is a bit like putting it in the entry hall on a windy day: it won't end well.
The butcher's advice: keep the meat in its paper or original packaging, or if not, in an airtight container. Open air is its worst enemy.
How long, concretely?
- Ground meat: to be consumed within 24 hours. It has a large surface area in contact with air, so it doesn't forgive anything.
- Poultry: 1 to 2 days maximum.
- Cuts for grilling or frying (steaks, cutlets): 2 to 3 days.
- Cuts for stewing or roasting: 3 to 5 days, their denser structure gives them a bit more leeway.
Beyond that, it's off to the freezer, no discussion.
Freezing, done right
Contrary to urban legend, freezing fresh, quality meat does not ruin it, as long as you do it correctly.
- Wrap each piece individually, removing as much air as possible.
- Write the date on it. We always think we will remember, we never do.
- Consume within 6 months for grilling pieces, up to 10 months for stewing pieces.
The real advice that changes everything: always defrost in the refrigerator, never at room temperature on the countertop. Yes, it takes longer. No, it is not negotiable for food safety.
Common mistakes we encounter too often
- Washing meat before storing it: water promotes the growth of bacteria rather than eliminating them. We do not wash meat, we cook it.
- Taking it out of the fridge too early "to save time": between 2 hours and 4 hours before cooking is perfect. An entire afternoon on the counter, much less.
- Refreezing meat that has already been thawed: one thawing only, that's it. Otherwise, the texture and taste pay the price.
The final word
Good preservation is simply respecting the meat that you took time and care to choose. A bit like you wouldn't leave a good bottle of wine in the full sun.
